Daniel Ramirez loves that his family is serving families by creating traditions with authentic spices and family recipes at Los Dos Potrillos. Daniel believes wholeheartedly that his restaurant’s fare pays homage to history and culture by serving fresh, Mexican cuisine using traditional recipes.

“Los Dos” as it is known colloquially is a popular spot for its regulars. Boasting as “real Mexican food” not “Americanized,” guests come for the food and stay for the culture. Every recipe has a story, along with an extensive cocktail list including Los Dos’ own Mexican Lager. With the motto of “An authentic Mexican family tradition,” Daniel said guests know to expect a genuine and authentic experience at Los Dos Potrillos.

Los Dos Potrillos was established in 2002 when Daniel’s father, Jose Ramirez ,opened the first restaurant in Centennial. Named after Daniel and his brother Luis, the rambunctious boys earned the nickname los dos potrillos, or two colts, from their grandparents. To this end, the newest Los Dos Potrillos – Castle Rock has two colts sculpted into the bar wall.

Since becoming CEO and COO respectively, Daniel and Luis operate Ramirez Hospitality Group, which includes six locations in Littleton, Highlands Ranch, Centennial, Parker, Northglenn and now in Castle Rock – located just north of the outlets.

Los Dos in Castle Rock takes on a much different vibe than the other five locations. Outfitted to be more of a Mexican hacienda, guests walk into a 9,000-square-foot upscale oasis with plenty of seating, including a 1,000-square-foot enclosed patio with a fantastic view of Castle Rock and the Rocky Mountains to the west. Whether sipping on a Los Dos specialty brew or house margarita, the eye-catching chandeliers and beautifully crafted seating, made by a family in Guadalajara, keep guests entertained and engaged.

Committed to authenticity, the Los Dos menu features flavor profiles that are rooted in the Ramirez family traditions. Los Dos food creates taste-craving memories that linger after you leave. From the welcoming, friendly employees who make everyone feel like family to preparing a margarita with the exact combination to make the best cocktail, Daniel said his team of hospitality leaders ensures the culinary experience at Los Dos is memorable.

Every guest is served mouthwatering salsa and homemade chips, both made from scratch every day. Serving classics and more wallet-friendly selections are what Los Dos does best, like the guacamole prepared tableside, a four-street taco plate with choices of steak, chicken or luscious carne adobada, and a burrito smothered with green chile. With more than 59 house favorite options for burritos, tacos, enchiladas and fajitas, and the exotic molcajete consisting of grilled chicken, pork steak, shrimp and cactus leaves served in a volcanic rock bowl with salsa, there is something to satisfy every craving.

For adult beverage lovers, the signature cocktails and specialty margaritas feature the Sandia, which has Correlajo Silver tequila, Chamoy rum, fresh watermelon and a tajin coated rim. Try the Blood Orange Margarita, which combines Chamucos with Solerno Blood Orange Liqueur. Both cocktails are sure to make the summer heat dissipate.

Desserts like the churros with ice cream, sopapillas and arroz con leche (Mexican rice pudding served warm) hit the sweet spot.

The breakfast menu offers Huevos Rancheros and a variety of omelets. For those with the appetite of a hungry athlete, opt for the Chilaquiles or the Los Dos Potrillos Breakfast Burrito that feeds a family of four. Breakfast is available until noon, Friday through Sunday at the Castle Rock location only.
Daniel added that the Northglenn location recently transformed into a full restaurant from a fast-casual eatery that was marketed as Los Dos Potrillos Cocina y Cantina.

Aimed more to the Gen Z demographic with its Instagrammable decor, Daniel said it stands out as a counter service with a full bar serving favorite dishes and bottomless chips and salsa. Daniel and Luis hope to target Denver for the next opening.

Los Dos does not take reservations, but they will do their best to secure a table for every patron so all can enjoy the energetic and social atmosphere and have a unique, memorable dining experience. Every location has the same menu items.
