Las Fajitas joins the Castle Pines dining scene

Aurora restaurant owner Alberto Granados was looking to expand his popular “Las Fajitas” restaurant. He says his new location in Castle Pines, (in the Safeway shopping center) is a perfect fit for his family-style Mexican restaurant.
“This is a great location and will give people something different from what is already here,” said Granados.
One of eleven children, the restaurant is a family affair. Brother Fermin, who lives in Texas, is Granados’ business partner, and brother Jose Luis is the chef. Even their dad, Juan, gets a shout-out on the menu with the restaurant’s “Don Juan’s Favorite” shrimp burrito.
The menu features many familiar Mexican favorites including burritos, tacos, salads, tostadas and tamales. “My favorite thing on the menu is the fajitas, of course!” said Granados. “I love the fajita trio, because you get to taste a few different things.”
There is also a wide selection of desserts, including a “chimi cheese cake” – a decadent confection of cheesecake fried in a tortilla, then topped with ice cream and caramel sauce.
All items are available to go and the restaurant hosts a full bar and serves breakfast items all day. Las Fajitas, which is located at 562 Castle Pines Parkway, Suite C-12, is open daily from 10 a.m. until 9 p.m. Las Fajitas is now open for business!
