Cucumber holiday trees

Each medium cucumber will yield about six “trees.” These are fun on their own and would also be a nice addition to a cheese plate or charcuterie board.


INGREDIENTS

  • 1 cucumber
  • 1 large carrot, peeled
  • Jarred roasted red pepper
  • Jarred capers
  • Prepared vegetable dip
  • 3-inch wooden skewers

DIRECTIONS

Trim either end of the cucumber. Then, use a vegetable peeler along the side of the cucumber to create long, thin slices (don’t slice the seedy center, but you can reserve it for use as a base stabilizer). Chop carrot and leftover cucumber into chunks. Skewer carrot or cucumber chunks as the base of the “tree” then gently fold cucumber slices back and forth and skewer. Adjust cucumber slices so they are even and attractive (you will need roughly three slices for each tree.) Top with a caper or roasted red pepper chunk and serve with dip of choice.
