Cheers to the bourbon ladies!

Michelle Bush and Jan Parker venture to the whiskey aisle at Castle Pines North Wine & Spirits, while holding two special varieties—Redbreast Single Pot Still Irish Whiskey aged 18 years, and one of Jan’s favorites, Garrison Brothers Texas Straight Bourbon Whiskey infused with honey.
This is a tale of two ladies who stumbled upon a passion for whiskey and bourbon. Serena neighborhood residents since 2006, Michelle Bush and Jan Parker were first introduced to bourbon 10 years ago through a friend in Utah. This was a very special bourbon called Blanton’s, a coveted, hard to find collectible variety. With the first sip, the two fell for it and have gone on to become aficionados of these lively spirits.
For those new to this world, whiskey is the broad term for distilled spirits made from fermented grain mash. Bourbon and scotch are specific types of whiskey with unique production requirements and flavor profiles.
Bourbon can only be called bourbon if it is made in the United States, contains at least 51% corn, is aged in new charred oak barrels, is distilled to no more than 160 proof and bottled at no less than 80 proof. Bourbon has a sweeter profile—not sugary sweet, just hints of sweetness through notes of vanilla, caramel, cinnamon, honey and more.
Old fashioneds, Manhattans and mint juleps are well-known bourbon drinks. To Michelle and Jan, the finer quality varieties, on the rocks, with a few drops of water or a neat pour is pure perfection.
The women enjoy tasting new varieties here, there and everywhere. “We travel and search out unique whiskey made in the area,” shared Michelle. Texas, Utah, Colorado and even Austria and Germany have provided tasting and exploration opportunities for these two. “Every region has something different,” she added.
The bottles on the store shelf are like books in a library, each full of history. Tastings are like unfolding the story. Two of Jan’s favorites included Garrison Brothers and Uncle Nearest 1884. Michelle loves Four Roses as a day-to day favorite.
Jan and Michelle are part of the Castle Pines North Wine & Spirits Whiskey Club, which has more than 1,000 members. Over the years, they have become friendly with owner Gary Torsher and through his store’s bottle raffles and tastings, the two have enhanced their knowledge and enthusiasm.
The couple even had a unique and fun opportunity to participate in a whiskey barrel tasting at a downtown Denver distillery to select a specific barrel to bottle for the store. The chosen drink is called Fireside Straight Bourbon Whiskey. At 134 proof, it is best with a little water, according to Gary.
Michelle and Jan say that whiskey and bourbon pairs perfectly with barbecue, pork (especially bacon) and even chocolate. Attending a bacon and bourbon party is a fond memory they share.
