007 Enchiladas

Summer’s warm days are a fading memory, but a warm welcome is available year round at one of Castle Pines’ newest additions to the local dining scene. A Taste of Mexico is located in the Village at Castle Pines Shopping Center.
“I think that one of the things that really sets us apart is our warm and genuine service,” said Mike Hernandez, co-owner of A Taste of Mexico with partner Alvar Cabeza De Vaca. “We’re not a large corporation, we’re a local business and we’re here every night making sure things are going smoothly.”
A modern approach to Mexican cuisine, one that focuses on fresh flavors and healthful cooking methods, is a defining characteristic of the menu.
“We don’t use any lard in any of our products,” said Hernandez.
House specials include fresh guacamole and ceviche, both of which are made table side. Some unexpected foods like salmon, scallops and pork chops compliment more traditional fare like burritos and enchiladas.
Margaritas, made to order with fresh-squeezed lime juice are another popular choice and are available in several varieties, including some infused with exotic flavors like jalapeno-orange, mango and hibiscus-tamarind.
“One of the most popular choices on the menu is our 007 enchiladas,” said Hernandez. “We call it that because it’s our secret weapon – it’s really good.”
A Taste of Mexico is open Sunday through Thursday from 11 a.m. until 9 p.m. and Friday and Saturday from 11 a.m. until 10 p.m. Visit
